Description
Flying winemaker Romain previously worked for Philippe Pacalet for three years.
In 2009, he and his brother Jean-Guillaume decided to establish their own modern boutique winery, Chapuis et Chapuis, which produces wines without added sulfites.
They use organic farming and biodynamic methods, harvesting grapes early, with an alcohol content of 11.5-12.5%, creating a unique style.
Their sparkling wine is made from 100% Aligoté and undergoes only a single fermentation.
